We asked Albatross for photos and got four bakes back.
Queen A, Apple Danish, baguette, croissant. No founders, no interior shots, no sign outside. Just four things they make.
Honestly, it felt quite fitting.

Product first, everything else after
Albatross was started by Geoff, Jasmin and Anders in Kreuzberg in 2017, before opening the bakery on Graefestraße.
Today they work out of Graefestraße 66/67 in Graefekiez, doing bread, pastries, sandwiches, coffee and a small deli offer.
The range covers most of what you would hope for from a neighbourhood bakery. Sourdough loaves and rolls, rye bread, croissants and pain au chocolat, puff pastry, brioche, baguette, smørrebrød and sandwiches.

And then there are the things people mention by name.

Coffee with a job to do
Bakery coffee does not need to be the main event.
It just needs to work with pastry, bread and butter and be something you want to drink more than once.
